2 days ago, after much persuasion, i finally managed to talk mum into letting me experiment with the frozen chicken lying in our freezer.
i asked mum only, but i didn't ask dad this time. cos 2 weeks ago, he said "don't play with the chicken, only got one."
....
so my mission was hainanese chicken rice! something i've always wanted to try but never dared to, cos like dad said there's usually only one chicken in the freezer, which means i either cook it properly or screw it totally.
anyway there are many recipes off the net, they're roughly the same but it's up to you to modify. here's my version haha.
The Chicken

The Chicken
my first time cleaning a bloody whole chicken and it was a nightmare. chopping off the head, plucking its hair, shaving excess fats, ripping the lungs, pulling out the guts and chopping off its fingernails. by the time i got to the nails i wanted to die..

after! almost after. was too disgusted to take pics after a while.
after rubbing the chicken with salt inside out, stuff the chicken with garlic and ginger.
immerse in boiling water, add a bit of salt and ginger to the water.
tip: don't forget to fold the legs into the tummy first!! if not you'll have a hard time closing the lid, like me.
tada! after 30 mins, and after chopping it up. but i made a mistake of removing too much excess fats. cos i ruined the perfectly good skin, especially with a lousy chopper.

The Rice
the trick is not to throw away the chicken water first, cos you'll need it for the rice and soup. but you may want to sift the chicken oil out first if you're health conscious.
scoop out a few cups to cook the rice, which should be added with some salt, smashed garlic and ginger.
tada! to make it more fragrant, leave more chicken oil inside.
this is optional, but with a whole lot of chicken stock left, why not! haha. just boil the remaining stock with white cabbage (and carrots, fishballs, etc if you want) and add salt to taste.

what i love about the soup is the natural sweetness from the chicken!
The Chilli
kim had a great time with the chilli haha. besides ginger, chilli, garlic, you should also add some chicken oil from the original chicken stock to make it fragrant (we did that secretly haha).

blend it all in with some salt, and alot of lime to taste.
and here's a nice bowl of chilli! thanks to my sis.

i hardly ate any chicken that night tho, after the massacre. but mum and dad said it tasted good! for a first timer haha, except that my presentation failed lol.
so im the hainanese that don't look hainanese, can't speak hainanese, maybe i need to master hainanese chicken rice instead lol.
